Cozy Sundays : Fagioli

The weather is officially changing here, for the colder. I'm not excited at all about this change, I despise being cold, so finding ways to warm up every aspect of my life is essential for me surviving winter. One of my favorite ways to ignite the holiday season is in my kitchen, today I am sharing one of our family's most loved recipes, Fagioli Soup or as Lyla likes to call it, "Red Soupy"—it's simple and delicious.

Ingredients
1lb Hamburger Meat
2 Tbs Butter
1/2 Yellow Onion Diced
1 Garlic Clove
2 Carrots Diced
3 Celery Diced
Mushrooms
1 Large  Zucchini Chopped
1 Jar of Spaghetti Sauce
56oz Diced Tomatoes (Basil, Garlic, Oregano)
48oz Beef Broth ( you can use chicken or veggie, I usually do 1 box of each )
30oz Red Kidney Beans
15 oz White Kidney Beans

1 box of Shell Pasta

Directions 
Season meat to taste with salt, pepper, garlic powder. Using Olive oil brown the meat in a large soup pot, add butter, onion, garlic, carrots, and celery. Cook until meat is done, stirring often. While the meat is cooking drain the beans and add to pot. Add Mushrooms, zucchini, spaghetti sauce, tomatoes, and broth. Bring to a boil for 30 minutes. Cook pasta in a separate pot and add to bowl of soup. Top with parmesan cheese

  2. This is such a great recipe for fall. Here in LA, the nights are kind of chilly and I love opening a window to have the breeze flow through. This would be great to make to keep warm and easy to make vegetarian.
