Happy Tuesday friends! Our summer schedule has been jammed packed with activities this year; birthday parties, family visits, vacations, hikes, housework and all the unpredictable things in-between. We have been go, go, go from day one, so when it comes time to make a meal I'm wanting it to be quick and easy. Nothing is worse than having a huge mess from dinner to pick up after a long day. It is also a plus if I do not have to go to several different grocery stores for one recipe (which seems impossible these days).
Homemade Pizza // We've been keeping pizza dough and pizza sauce on hand this summer. It's a quick easy meal that the whole family will love. We can nine times out of ten make this with ingredients we already have. I really only love pizza if it's homemade because I can control what goes on it. It is also a good way to decrease the amount of food waste in your home by using your chopped veggies or left-over grilled chicken (paired with white sauce).
For this recipe you'll need:
Store-bought pizza dough
Pizza sauce as desired
A sprinkle of Mozzarella Cheese
Spinach as desired
Sliced Red Onion
Sweet Peppers
Sliced Tomatoes
Sliced Jalapenos
Bake dough for 8 mins, apply toppings and bake for another 8-10 mins until golden brown.
Summer Zucchini Pasta // We love zucchini and we love pasta, this is one of Lyla's favorites things to eat. Sometimes we eat it as a meal or sometimes we use it as a side to our grilled chicken or salmon.
Watermelon Salad// We could eat a bowl of this as a meal, but it also makes for a great side. I think the key to fast meals is making a side that can last 2 days in the fridge. Having to only grill or having to only make a side removes stress from my life and I'm all about that.
Cucumber + Avocado Sandwich // Alan thinks I'm weird because I love veggie sandwiches, I'm not really big on meat, but for people who are can just come in. It is easy and a way to make sure your avocados aren't going to waste. There's one thing in life you don't want to be and that is an avocado-waster.
Mango BBQ Chicken + Mango Salsa // It sounds like a complicated meal but it's not, it takes about thirty minutes from prep to finish and it's absolutely delicious.
